Street Food Stadium was created on the success of its sister location, Pau Hana Market Waikiki. After nearly two years of operation, and thousands of wonderful patrons at Pau Hana Market, we wanted to develop another location, but this time with Kama’aina in mind.
One of the biggest challenges for us was how to keep our local guests happy. How do we create a project where kama’aina won’t get tired of our selection of food? How can we serve AND engage our community?
We found the answer. Flipping the business model upside down is what we have come up with. At Street Food Stadium we don’t just provide common area for trucks to serve their food, we provide the trucks. Each and every truck at Street Food Stadium is owned by us and leased out to our vendors on 6 month to 1 year leases. Each truck comes fully equipped and is basically a turn-key commercial kitchen ready for a vendor. We also provide all the infrastructure a vendor might need such as a commercial commissary kitchen, storage, and even menu development consulting.
How does this solve the challenge? Well it solves it in two very important ways. For local guests, they can rest assured that there will always be something new to try. Since our lease terms are set, there will be an ever evolving set of trucks at Street Food Stadium to delight your stomachs. This model also serves our community by offering folks a very affordable option to start a new business, or maybe to explore a concept that might be on your mind. All without having to spend a small fortune in your normal brick and mortar setup. Young chefs, old chefs…hell, even wannabe chefs now all have access to an affordable way to have their own business.
